Chiffon cake (Dairy Free)

Finally two eldest girls are back in school!! So I attempted to bake a tricolors chiffon cake this morning with my newly bought 20cm chiffon tube pan because Ms. A has been asking for a cake.

Just after cracking the second egg, the littlest was crying badly so I was so panicked and rushed everything and sent to bake in 25 mins without looking much at recipe (ok I actually didn’t plan ahead 😝) so…… I basically just bake with a basic chiffon recipe from @justonecookbook and added like 20g of matcha powder for the green portion instead of 5g which obviously it’s wayyyy too much! hahahhaa and so today’s chiffon cake has slightly bitter taste due to the strong matcha flavor.

Well… we learn from mistake don’t we? 😊 better chiffon cake next round ! Luckily Ms A tasted and said she doesn’t mind at all and she still likes it ❤️❤️❤️

Ingredients for 20cm chiffon tube pan

Preheat oven at 170deg

[A]
5 egg white (cold)
65g castor sugar

(to save time, I put this egg white on stand mixer after I separate the eggs , while I proceed to prepare the egg yolk mixture with hand whisk) ,
Beat egg white on lowest speed for 5-10mins ,add sugar slowly in 3 additions. Beat till firm peak.

[B]
– 5 yolks
– 50g castor sugar
– 60g canola oil
– 95g unsweetened cashew milk
– 1 tsp vanilla essence

Beat yolk with sugar till pale yellow and creamy, add oil and mix well, add cashew milk plus vanilla essence and mix well. divide to 3 portions (about 80g each)

1. Original (40g cake flour +2g baking powder – mix well)
2. Matcha (35g cake flour + 5g matcha powder + 2g baking powder – mix well)
3. Chocolate (20g cake flour + 20g cocoa powder+ 2g baking powder a- mix well)

Sift 1,2,3 separately into the 3 portions of egg yolk mixture from [B] and mix each portion gently till just combines without visible lumps

Add 3 tablespoons of meringue to each bowl of egg yolk and flour batter. Mix well and divide the remaining meringue equally into the 3 bowls and mix gently.

Pour the cake batters into the tube pan. For the above design… I just go one round around the tube for each color. Repeat till all batter are used up. Send to bake for 40 mins.
