Dairy-free Bread Pudding

Made some challah but over baked it 😅 it gets a bit dry the next day. So made it into bread pudding for our after dinner dessert.

Made some adjustment to @preppykitchen ‘s recipe to make it dairy-free and also added cinnamon powder and prune. 🤩any cinnamon lover here ?

We had it with oat milk vanilla bean ice cream from @patandstick 😋

Dairy-free Bread Pudding
(Using 28x18cm / 2.2L baking dish)

Ingredients:
294g of stale bread cubed (I used mixed cocoa and plain challah)
2 cups of warm unsweetened almond milk @sanitariumsingapore
3 tbsp vegan butter and extra for greasing (I used @plantbasednuttelexsg )
1/2 cup Sugar
1/2tsp salt
3 large eggs
5 dried prunes (cut) @sunsweetsg
1 tbsp of vanilla extract @heilalavanilla
1/2 tbsp of cinnamon powder @originshealth.sg

1 tbsp Icing sugar for decoration

Steps:
1. In a sauce pan, pour warm almond milk, add butter , sugar and salt. Cook over medium low heat to melt the sugar and butter. Set aside to cool.
2. Preheat oven to 177 deg cel.
3. Grease the baking dish with some butter. Pack cubed bread onto baking dish. Top the top with cut dried prunes.
4. Add vanilla extract, cinnamon powder and eggs into milk mixture and whisk till well combined.
5. Pour egg milk mixture on the bread. Gently pressed down the bread a little to let it soak up the liquid.
6. Bake in preheated oven for 40-50mins. Tent it with aluminum foil when the top turns brown (about 20-25 minutes)
7. Add icing sugar on a sift. Lightly tap the side of sift to sprinkle on the bread pudding. Cut and serve.
