Dairy-free Carbonara and Corn ribs

Simple and not so healthy dinner tonight 😛hubby complained as we have no vegetables !

Shared this dairy-free carbonara before in this blogpost. It’s simple and quick carbonara. Just make sure to use pasteurized eggs so it’s safer for kids ☺️ We adjusted the recipe a little to increase the portion and also did it over the stove instead of thermomix. We also added 3 whole eggs instead of an extra yolk so it’s not as creamy as the last time. Because I did not want to store the extra white in the fridge.

The corn ribs are amazing😍 hubby and the eldest kiddo love it and snatched up most of the corn. The hub said I didn’t make enough 😅 Recipe from @yuzubakes

Dairy-free Carbonara (4 servings)

Ingredients:
Shallots 45g – minced
Garlic 4 cloves – thinly sliced
olive oil – 10g
Streaked Bacon 220g – cut to about 1 cm wide
Dairy-free shredded Parmesan cheese -70g
350g spaghetti
Salt and black pepper
Pasteurized eggs 3 whole eggs (add one additional yolk for more creamy sauce)

Steps:
1. Heat olive oil and fry minced shallots for 3 mins
2. Add bacon and sauté for 2 mins
3. Add sliced garlic, sauté for another 3 mins. Set aside
4. Cook spaghetti till al dente as per instruction on packaging
5. While noodle is cooking, mixed 3 eggs with parmesan cheese. Place it into the service bowl/plate.
6. Once noodle is cooked, drain and immediately place it on the egg mixture in the serving bowl and mix well to emulsify the egg with the heat from the cooked noodle.
7. Add cooked bacon and mix well and serve

Oven baked Corn ribs

Ingredients:
2 corn cobs – quartered lengthwise
Olive oil – 1 tbsp
Ground coriander – 1 tsp
Paprika – 1tsp
Garlic powder – 1/2 tsp
Oregano – 1tsp
Few crack of Salt and peppercorn to taste

Steps:
1. Preheat oven to 180 deg cel
2. In a bowl, mix olive oil with the rest of the ingredients including salt and peppercorn
3. Place corn strips on baking tray lined with baking paper
4. Spoon the oil mixture onto the corn strips, massage/brush to coat the corn evenly
5. Bake in the preheated oven for 20 mins till it’s cooked.
