Dairy-free Salmon Baked Rice

Funny girl who instead of spit the hot rice out, she took a mini-fan to blow her mouth…..

A quick one dish meal for dinner. Kids can’t wait to tuck in and had to use the fan to avoid getting their mouths burnt 😅

It’s not something we get to eat outside or get to cook often as dairy-free cheese is quite costly and not commonly sold outside. So Ms. A really enjoy her cheesy baked rice. 😊

Ingredients:

– rice (we cooked 2 cups)

– vegetable stock @kallo

– Alpro single soya @alpro

– onion (finely diced)

– Frozen peas

– dried herbs (rosemary and thyme)

– Salmon diced (we used 300g fillet cut)

– Tomatoes diced

– Dairy-free Mozzarella cheese @violife_foods

– Kewpie mayonnaise @kewpiesingapore

– Salt

– Black pepper

– Dairy-free Parmesan cheese @followyourheart

Steps:

1. Cook rice with vegetable stock in the rice Cooker

2. Marinate salmon and tomato with some salt and pepper

3. Preheat oven to 180deg

4. Heat up some oil and sauté onion till translucent.

5. Add Alpro single soya , dried herbs and frozen peas , sauté for 3 mins over medium heat, turn off the heat and stir in mozzarella cheese. If sauce is not thick enough, add some kewpie mayonnaise to thicken it. Add in some black pepper and salt and set aside.

5. Spread cooked rice on a baking dish

6. Spread half of the cooked sauce on the cooked rice

7. Arrange salmon and tomato onto the sauce and spread the remaining sauce on the salmon

8. Sprinkle the top with parmesan cheese and bake for 20 minutes.
