Dairy-free Spaghetti Carbonara

Cooked this not so healthy carbonara with leftover bacon bits we had in the fridge. No doubt, the kids love this savory and creamy spaghetti. 😅 would have added some mushroom if I have it at home. Anyway, hubby also sprinkled some fried shallots as toppings and had two servings.

We have used the thermomix to do some of the cooking, but it can be done over the stove too.

Ingredients:

  • Extra virgin olive oil
  • Garlic 3cloves – thinly sliced
  • Shallots 35g – peeled
  • Shredded Dairy-free Parmesan cheese 55g @followyourheart
  • Pasteurized Eggs – 2 whole eggs + 1 egg yolk
  • Bacon bits 155g
  • 300g spag
  • Salt and black pepper

Steps:

  1. Place peeled shallots in mixing bowl, chop 3sec/speed 5 and scrap down the sides of mixing bowl with spatula
  2. Add bacon bits , extra virgin olive oil and sauté 2 mins/120deg/speed 1.
  3. Add garlic slices and sauté for another 4 mins/120deg/speed1. Remove from mixing bowl. Rinse the bowl to use for mixing egg.
  4. Cook spaghetti in a pot till al dente as per instruction on your spaghetti packaging
  5. While waiting for the spaghetti, place eggs into mixing bowl with parmesan cheese, salt and black pepper and mix for 15sec/speed 4
  6. Drain cooked spaghetti onto large serving bowl, pour cooked bacon and egg mixture onto spaghetti while it’s still hot. Mixed well and serve immediately.
