Fried shallots/Bawang Goreng

This fried shallots is a staple at home. Back in Indonesia, my mum will always have a tub ready for us to sprinkle on instant noodle, soup, steamed eggs, fried noodle, fried rice, vegetables! 😅 it kinda elevates the taste of every dish!

Homemade ones are very different from store bought/ factory made. Because it’s thinly sliced, less lumpy and just give more fragrance probably due to the selected type of shallots too! I can still recall that one of my schoolmate was such a fan to my mum’s fried shallots that she often requested for my mama to make a tub for her when I returned to Indonesia. 😅

Before covid-19, my parents visit me quite often and so I got my fried shallots supply from them. After covid, they sent a few care packs and fried shallots is of course a must to be included!😍

But it’s been quite a while since I got them to send me care packs. So finally I decided to make some on my own after getting the super nice shallots from @quanshuiwetmarket . And now my husband and kids are eating it like snacks 🤣

Steps:
1. Peel and slice shallots about 1-1.5mm thickness. Make sure they are free of water.
2. Heat up ample amount of oil till slight bubbling around chopstick when inserted.
3. Add sliced shallots into heated oil, sprinkle some salts.
4. Let it fry on medium low heat , till slight browning. Occasionally stir it to avoid clumping.
5. Just before desired browning achieved, remove and drain the shallots. It will continue to cook with the remaining heat. Let it cool on kitchen towel to absorb excess oil.
6. Keep in air tight container which is lined with kitchen towel.
7. The filtered oil can be kept for cooking too! It’s very fragrance shallots oil. I used it to drizzle on steamed eggs/ blanched vegetables or homemade instant noodle sauce, muah chee etc.
