Hubby and I love kimchi and also fried rice! Since kids are having their lunch at school, we decided to have our kimchi fried rice at home.😋
Recipe adapted from our all time favorite YouTuber for Korean foods – @maangchi ☺️ we have been watching her YouTube videos since we were students. That’s about 14 years ago 😅 I can still remember the first video that my ex-boyfriend a.k.a my hubby and I watched together. It was her korean pancake video as we were trying to cook our own korean vegetable pancake that time. ☺️
Yes. We’ve been Korean food lovers since then 🤣so homecooked kimchi fried rice is always such a satisfying feast for us. 💖
Ingredients:
Cooked rice (for 3 pax)
1.5 cups of Chopped kimchi and some kimchi juice (I used Jongga)
1.5 tbsp Gochujang
1/4 cup hot water
1/4 cup chopped spring onion (green part)
2 tsp sesame oil
2 tsp toasted sesame seeds
Roasted seaweed cut in stripes for garnishing
2 tbsp Cooking Oil
Steps:
1. Heat cooking oil in a pan/wok. Add chopped kimchi and stir fry for a minute over medium heat.
2. Add cooked rice and mix well. Cook for 2-3 minutes.
3. Add kimchi juice, Gochujang and hot water. Mix well and cook for another 3 minutes
4. Add chopped spring onion and sesame oil. Mix well and turn off the heat.
5. Dish out in serving bowls/ plates, garnish with toasted sesame seeds and seaweed. (We also added an egg)
