[Thermomix] Dairy-free Lemon and Coriander seeds Madeleines

Finally baking something on this cold and wet Sunday morning. We had this for our hightea after kiddos did their homeworks. 😓it’s getting harder to get them to do homework these days, so I had to “motivate” them with this Madeleines. #dontjudgeme

I was planning to use cardamom powder but found out that we only have coriander seed powder at home and it actually smells great! So I added a quarter teaspoon into the batter , glad that the madeleines turn out yummy with a little citrusy and floral taste from the lemon zest and coriander seeds powder. 😍

Ingredients:
2 eggs (60g with shell)
80g castor sugar
100g cake flour
1/4 tsp baking powder
100g melted plant based butter( I used @plantbasednuttelexsg )
Lemon zest from 1 lemon
1/4 tsp coriander seeds powder
1/2 tsp vanilla extract
Pinch of salt

50g Dairy-free chocolate (melt using Bain-Marie method and pipe it on cooled madeleines)

Steps:
1. Crack the egg into the mixing bowl with butterfly attachment. Slowly add in sugar while let it run at 3 mins/40deg/speed3.5. (We used chilled eggs from fridge)
2. Mix for another 2 mins/45deg/speed3
3. Add melted butter, vanilla extract , coriander powder and lemon zest , salt , mix 15sec/speed 3
4. Sift flour and baking powder into mixing bowl 10sec/speed 2
5. Let rest in fridge for at least 30 mins
6. Scoop into greased madeleines moulds and tap the mould on table to remove big bubbles
7. Bake in preheated oven 190-200deg cel for 11-13 mins
