[Thermomix] steamed buns/ mantou

Keeping kids at home during this pandemic time means we have to think of endless activities with them 😐 they are either bored/hungry all-day-long. Very often they request for making steamed buns/mantou as they get to have some edible sensory play. This time we made the dough in 2 colors ,red and green.

I made a bigger batch of dough using the thermomix (total dough about 490g i.e 16 buns of 30g Each)

Adjusted recipe from “Perfection with Thermomix in 7 days -quick steamed buns” with some adjustments so dough is less sticky for the kids to handle.

Ingredients:

  • 150g unsweetened soymilk
  • 3/4 tsp instant yeast
  • 18g caster sugar
  • 20g olive oil
  • 290g hongkong flour
  • 3g red yeast powder
  • 1 tsp matcha powder
  • 0.5 tbsp black sesame seeds
  • A pinch of salt

Steps:

  1. Mix water , yeast , sugar and oil in mixing bowl , 1 min ,speed 2
  2. Add in flour and salt – knead for 2 mins
  3. Take 220g of dough out and put in a separate bowl to mix with matcha powder manually.
  4. Add red yeast powder and sesame seeds in the mixing bowl and knead for 20 seconds.
  5. Remove dough from mixing bowl and divide each colored dough to 16 pieces for each color. Shape as desired. (We shaped it as watermelon , strawberry and some “fancy” shapes but the kiddos 😅)
  6. Let proof till double (about 30 to 40 mins)
  7. Steamed on boiling water for 12 mins and let it sit in the steamer for 5 mins before taking it out to avoid shrinkage.
