[Thermomix] Tangzhong Wholemeal Bread

Baked my favorite recipe for bread on Xmas while solo parenting my girls as our dear helper was on homeleave. Won’t be able to do it without my German helper , Thermomix!

This recipe makes one wholemeal milk loaf and 10 sausage bread.

Ingredients :

Tangzhong
40g bread flour
200g water

460g bread flour
120g fine wholemeal wheat flour
40g caster sugar
6g instant yeast
190g to 210g icy cold fresh milk
1 egg (60g)
Tangzhong, use all amount~200g
50g unsalted butter
7g sea salt

10 sausages
Toppings for sausage bread
Corn kernel
Mozzarella cheese
Chopped spring onion

1. mix 40g bread flour and 200g water 3mins/80 deg cel/speed 3 and let it cool down till room temperature (below 40deg cel). You can also prepare in advance and store in the fridge.
2. Add sugar , yeast, egg and milk in the mixing bowl with the Tangzhong paste mix for 30 seconds/speed 2 .
3. Add bread flour and knead for 2mins .
4. Add in the butter and salt. Knead for 2 mins.
5. Transfer dough onto pastry mat and shape into a giant ball. Leave it in covered place (I left it the oven which is turned off) and let rise for 40 mins/till doubled in size.
6. Place dough on a work top, press and expel the air bubbles. Approximately divide the dough into 3 balls of 200g dough for the loaf pan and 10balls of 55g for the sausage breads.
7. Starting from the first dough, roll out into a wide rectangular. (20cm x 30cm) Flip the smooth side down, from crosswise fold left and right to the middle (forming 3 layers fold) and roll the 3 layered lengthwise into Swiss roll form, pinched the seam and place the roll into Pullman tin , seam side down. Let it proof till 80-90% full.
8. Shape the sausage bread as per videos. Let rise for 20 mins (while start to preheat the oven to 190°C)
9. Bake sausage bread in preheated oven at 190C, place it at the lowest rack and bake for 15mins . Remove and let it cool on wire rack.
10. Loaf bread should have risen to 90% of the tin. Bake in preheated oven for 30 mins.
11. Remove from the oven and immediately remove the bread from tin to cool on a wire rack before slicing.
