Our kids love this creamy mushroom soup! We usually pair this with our homemade pasta or homepade pizza 😊 or just some quick focaccia.
Recipe adapted from Thermomix Wholesome Vegan cookbook.
ingredients :
– 1000g vegetable stock (@kallo – mix
1cube with 1000ml water)
– 500g mushrooms (mix of white button / brown button)
– 120g raw cashew nuts
– Mixed herbs (1tsp Rosemary and 1tsp thyme)
– rock Salt
– extra virgin olive oil
Steps
1. Place mushrooms into mixing bowl and chop 3sec/speed 5 , switch to weighing scale mode and took out about 100g of mushroom and set aside (I picked out those bigger chunks and manually sliced it and set aside)
2. Add vegetable stock and raw cashew nuts into the mixing bowl with the remaining mushroom. Cook 10 mins/95deg/speed1
3. Add in mixed dried herbs, blend 1min/speed 5-10, increasing the speed gradually till speed 10
4. Add in remaining reserved chopped mushroom and rock salt. Cook for 1 min/100deg/speed2
5. Transfer to serving bowl and drizzle some extra virgin olive oil and serve.
