Tried out a wholemeal loaf recipe from Thermomix cook book, “Easy Meals for the Family(Asian edition)”
This recipe is not suitable for beginner bread baker. The dough is extremely sticky so I had trouble shaping them. 😅 and sprinkled quite a lot of flour in the end. Or maybe because I replaced milk and butter to plant based ones? 🤔
Interestingly, as I used two different loaf tins. One from San Neng (I got it at phoon huat store 6 years ago) and another from Taobao just few months ago. San Neng loaf tin gave an even browning and no burnt. While taobao loaf tin gave me this burnt crust all over 😢
I think I can’t really use the two tins together as their heat rates are very different. Guess I have to find another San neng tin as I really like it.
Luckily both loafs turned out still delicious and we used it for egg mayo sandwich and also tiktok sandwich 😋
Egg Mayo Sandwich
Ingredients:
-bread slices
-hard boiled eggs
-mayonnaise (we used Japanese mayo sauce from Kewpie)
-black pepper and salt (we did not add as we shared with our young kids)
Steps:
- Mash boiled eggs with mayonnaise until getting the desired consistency
- Spread on bread and cut the bread
Tik Tok Sandwich
Ingredients: (for 2 slices of bread)
– 2 eggs (beaten with pinch of pepper and salt)
– 2 slices of cheese
– 2-4 slices of ham
– 2 slices of bread
– butter
Steps:
- add a tbsp of butter on a non-stick frying pan
- pour egg mixture onto a non-stick frying pan
- arrange the bread in the middle of the egg, let it cook till the egg is set
- flip over the bread egg i.e. the bread side down (can add some butter too)
- fold the excess egg on the sides to the bread
- layer cheese and ham on the bread
- fold up the bread to sandwich everything in between
- best serve warm when cheese is still melty
