Randomly bought a Keebler graham ready crust on one of our grocery trip with the kids because the ingredient list looks vegan friendly.
I get excited easily whenever I find foods which are either vegan or dairy-free. It’s not necessarily the healthiest, but if it’s not extremely bad, I always like to get it. Just to expose my kid who has dairy allergy to more varieties of food.
Googled around for vegan chocolate pie recipe and decided to try out @aline_made recipe, adjusted a little since I only have 300g of silken tofu. Although my fillings was not enough to fill the pie crust but the fillings still tasted delicious and no weird tofu taste at all 😱👍🏻 Love it 💖
My allergy kiddo said it’s too rich for her liking 😅 I had it with my espresso and it was wonderful!
After pouring the vegan chocolate fillings into the pie, we didn’t want to waste the chocolate fillings which were stucked on the mixing bowl and decided to add in frozen açaí and frozen banana! managed to make 3 small açaí bowls 🤩 so good to eat it in this hot afternoon!
Vegan Chocolate Pie 🍫
Ingredients:
1 @keebler graham ready crust
300g silken tofu
260g vegan dark chocolate
100ml unsweetened soy milk
2tbsp maple syrup
1 tsp vanilla extract
Steps:
1. Drain water from silken tofu and rest tofu on a few layers of kitchen towel. Lay some kitchen towel on the tofu too and weight it down with a cup. Set aside.
2. Melt chocolate over double boiler
3. Add silken tofu, melted chocolate and all ingredients into thermomix mixing bowl
4. Blend everything together 3mins/speed 9 ( if needed repeat for a minute /until smooth)
5. Pour onto ready crust and let it set in fridge for at least 2 hours
Chocolate açaí bowl 🍧
Ingredients:
Leftover vegan chocolate pie fillings on the mixing bowl
Frozen açaí – 200g @sambazon_singapore
Frozen banana – about 2 big bananas
1 tbsp of unsweetened soy milk
Steps:
1. Blend everything together for 1 min/speed 10 . Scoop and serve 😌😋
