Finally made some gingerbread man with kids over the weekend. We tried @mrslazy.kitchen gingerbread man recipe with nuttelex butter and it is absolutely delicious! Steps are easy to follow too! So we decided to bake for the kids’ teachers. To cater to more diet restrictions,I replaced the egg with chia seed egg to make a vegan version and delighted that it works and tasted great with a bit more crunch probably from the chia seeds 😅
We also made the Royal icing with Aquafaba so it’s also vegan. Kids enjoyed themselves piping the icing on the gingerbread man ☺️👍🏻

Vegan Gingerbread man
Ingredients:
Chia seed 1.5tbsp
Water 4.5tbsp
Vegan butter 105g (I used unsalted oat butter @miyako creamery)
Brown sugar 55g-60g
Molasses 36g
Fresh grated ginger 30g
All purpose flour 300g
Cinnamon powder 3g
Nutmeg powder 3g
Cocoa powder 3g
Baking powder 1.5tsp
Steps:
- Make chia seed egg by mixing chia seed with water and let stand for 10 mins till gluey
- In a bowl, mix dry ingredients, flour , cinnamon powder, nutmeg powder, cocoa powder and baking powder. Set aside
- Mix soften butter with brown sugar till evenly combine
- Add molasses. Mix well
- Add chia seed egg and fresh grated ginger. Mix well
- Sift in dry ingredients and use a spatula to combine and form a dough
- Cling wrap and let set in chiller for at least an hour
- Dust flour on pasty mat and roller to roll out the dough to about 5mm thickness and use gingerbread man cookie cutter/any other shapes to cut. Place cut dough on baking tray and cling wrap before let it set in chiller while preheating oven to 170deg cel.
- Once oven is ready, bake gingerbread man for about 15mins.
Vegan Royal icing
Ingredients:
67g aquafaba (liquid from canned chickpeas)
250g icing sugar
1/8 tsp cream of tartar
1/4 tsp vanilla extract
Gel/ powder coloring
Steps:
- In a medium sized bowl, whisk aquafaba and cream of tartar till frothy.
- Little by little add in sifted icing sugar
- Add vanilla extract and continue whisking till shiny and soft peak/ pipeable texture
- Divide into few bowls to mix with colorings
- Fill it into piping bags.
- Keep in chiller until ready to use.
