Classic Waffle

In October 2021, we have tried this classic waffle recipe (by @iwashyoudry ) but made it into dairy-free version for Anya by replacing melted butter with canola oil and milk with almond milk. Girls love it.

This time, we finally followed the exact recipe by using melted butter and warm milk as Anya has been given green light by the doctor to upgrade from milk muffin to waffle and pancake for her milk ladder challenge!

This recipe produce amazing waffle , crispy on the outside and fluffy inside. We have it plain (with a little cocoa powder) as the kids love it as is. Hence, I didn’t offer any other syrup to cut down on their sugar 😂 I also mixed some of the waffle batter with cocoa powder!

Ingredients:
250g all purpose flour
2tbsp castor sugar
4 tsp baking powder
1/2 tsp salt
2 eggs
360g warm fresh milk
85g unsalted butter
1 tsp vanilla extract

5g cocoa powder

Steps:
1. Preheat waffle iron
2. In a large bowl, combine all dry ingredients
3. In a separate bowl, whisk the eggs and stir in warm milk, melted butter and vanilla extract.
4. Pour the wet ingredients into dry ingredients and whisk to combine until just blended.
5. Scoop out some batter (almost half) and mix it with sifted cocoa powder
6. Scoop the two batter into piping bags.
7. Pipe onto preheated waffle iron and cook till crisp and golden brown. Serve immediately or cool on cooling rack.
