[Thermomix] Dairy-free Fluffy Doughnut

Made this dairy-free doughnut for Ms.A because she can’t really eat doughnut from stores. Almost all store bought are not dairy-free. So she has never had a chocolate coated doughnut like this one before 😅

Her first time trying and she gave me thumbs up of course ! 😜

Adapted from @yackikuka ‘s no knead fluffy doughnut recipe

it’s a no knead recipe, But I made it with thermomix for mixing.

Ingredients:
150ml milk/water (I used water)
2 tbsp castor sugar
1tsp instant yeast
1 egg (I used 60g)
35g melted vegan butter/cooking oil (I used @plantbasednuttelex , melt in microwave oven 15-20sec)
300g plain flour
25g corn starch
3/4tsp fine sea salt

Oil for frying

Some toppings we tried this time:
– Melted dairy-free chocolate
– Chocolate rice
– Cinnamon sugar mixture

Steps:

  1. Add water , sugar , yeast and egg to mixing bowl. Mix 20 sec/ 40deg cel/ speed 2
  2. Add plain flour, corn starch, salt, mix 1p sec/ speed 2
  3. Knead 3 mins (can add more flour 1/2tbsp at a time and continue kneading if dough is still very wet)
  4. Roll out dough onto pastry mat. Manually knead a few times (greased hands if necessary) and divide dough to 12-15 pcs (total dough about 570g so each pieces 45g)
  5. Round the dough into taut balls
  6. Take the first ball (do this in sequence as the dough rise pretty fast) , lightly dust it with flour, place it on 10cm x10cm parchment paper and flatten it with rolling pin to the size of the donut cutter
  7. Lightly dip the cutter onto flour and Press it down on the flatten dough to cut to desired shape (you may use a piping head or a small circle cutter to cut out a hole in the middle of the flatten dough). Set aside , cover and let proof for 30-40mins until the dough looks smooth and slightly puff up
  8. Prepare a pan/pot with an inch of oil. Heat up the oil and turn the heat to low. Fry the doughnut one side at a time for about 3 -4 mins (or until golden brown) with low heat. Flip only once to get the white line.
  9. Let fried doughnuts cool down slightly on rack (also to let the oil drip off). Dip in coating/toppings of your choice.
